Roots and squash bake

Colors are a very good thing.

 

They are very nice to look at.

 

They are a sign of nutrients- more color>more nourishment

 

They photograph nicely, so they are more fun to look at

 

You can impress your friends with your fancy pictures

Any guesses what that is?

 

Seriously.. anyone? Cause I never found out... I just pick up the pretty things...

So basically I chopped all the pretty things into little squares and left them to sunbath in the oven

Oh don't forget they need sunscreen- coconut cream coming right up!

Add a dash of bronzing oil- the yummy Bragg Liquid Amino's and lay em down under the sun (the one in your kitchen) for oh... and hour or so..

Recipe

Serves 5

Prep time: 15 min

Cook time: 60 min

Total time: 1h 15min

 

Ingredients:

 

1 butternut squash

1 large red beet (or 4 small)

2 large potatoes

1 medium mystery squash- maybe kombucha? pick your fav!

1 onion

1 can coconut cream ( or the thick part of canned coconut milk)

Braggs Amino's or salt

1/4 cup water

 

Instructions:

 

Preheat oven to 375

 

Chop up all those veggies into small, bite sized squares

 

Pour water into tray/pan

 

Lay down all veggies in single layer on cooking tray or glass pan

 

Microwave coconut oil for 45 seconds

 

Drizzle coconut oil onto veggies evenly

 

Sprinkle Braggs Amino's or salt to taste

 

Put tray into oven, and play the waiting game
