You guys, I've done it. I made tasty sweet things without any tasty sweet things. Holy crap! I would like to disclose a sensitive piece of information with you. Are you ready?

I am addicted to sugar. I am addicted to you, chocolaty sugar, you, yes, yes you. Sigh.

 

I know what you're thinking... oh that... everyone says that and its just a cute joke now adays... blah blah blah. I wish I could say this is cute. This is another c word, but not cute. It's crazy. Last week, on grocery day (Sunday!) I purchased ONE POUND of bittersweet chocolate with almonds at Trader Joe's.

Do you want to know what happened to it? I ATE HALF OF IT.

 

IN FOUR DAYS.

 

Now I'm no science wiz but according to my calculations, that means I ate HALF A POUND OF CHOCOLATE.

 

IN LESS THAN ONE WEEK. I even put it in the freezer to disuade myself from such behavior... alas... turns out extra crunchy frozen chocolate bar is AMAZING.

Oh hello walnuts, welcome to our cookies! What's that? You're allergic to nuts?

 

So is my best friend, so kick em outa there! No need for nuts if it means asking a stranger to stab an epipen into your leg and get a not free ride to the ER! (True story)

OH hello you little uncooked beauties... let's check on you in a quick 10 minutes!

OH! How you have blossomed sweet sweet brownie cookies! Time has been good to you!

Recipe

Prep Time: 15 min

Cook Time: 10 min

Makes 25

 

Ingredients

1/2 cup brown rice  flour

1/4 cup sweet white rice flour (aka sticky rice flour)

1 cup oats

1/4 cup chopped walnuts

1/4 cup cornstarch

1/4 cup chocolate chunks/chips

1/3 cup Earth Balance butter

1/4 cup molasses

1/2 cup raisins

1 small banana or 1/2 large banana

1 tbs ground flax meal (+3 tbs warm water)

11/4 tsp guar gum

1/4 cup tapioca flour

1 tsp baking powder

3/4 tsp baking soda

1/4 tsp salt

2 tsp vanilla extract

 

Equipment: Food Processor

 

Directions

 

Soak raisins in enough water to cover all raisins, let soak for 10 minutes, set aside

 

Mix flax meal and warm water, let soak for 10 minutes set aside

Preheat oven to 375°

 

In medium bowl, mix brown rice flour, white rice flour, oats, walnuts, cornstarch, chocolate chunks, guar gum, tapioca flour, baking powder, baking soda, and salt. Mix well.

 

In food processor, add soaked raisins (drained), banana, and flax meal mixture. Process for 1-2 minutes.

 

Add raisin/flax mixture to the medium bowl. Melt butter and mix in. Add rest of ingredients. Mix well.

 

Drop dough by level tablespoonfuls 1 inch apart onto well greased baking pan, or use parchment paper. Bake at 375° for 10 minutes. Enjoy my little butterless buttercup (that's you)!
