The Bagel Burger

Bahhhhgel. Bagal. Baghel. Bagel. Bagel Burger! I'm too excited!

 

This is not your ordinary boring baygel dinner.

 

Why would I go through all the trouble of cooking, picturing, editing, posting, writing for an ordinary baggel?

 

I wouldn't!

 

No, this is superior. Far superior. It reaches levels of gluten free bagelness the likes of which have never been eaten before!

(Thanks Trader Joe's for doing the gluten free-ers a solid.) (You can pay me later) (Just kidding) (I wish) (What I really wish is to write the entire post in parenthesis) (Sigh)

So this is more like a lazy 'I WILL NOT COOK TODAY BUT I MUST' meal. It's basically assembly, with some chopping and boiling. But that's it.

 

The lazy factor is that we aren't making our own bagels (one day, one day) and we are using premade veggie burgers (Homemade recipe coming soon!) Until then, I have recommendations!

 

I used TJ's Cowboy Quinoa Burgers (contains wheat and egg!), but I prefer Hilary's Eat Well Burgers since they are GMO free, gluten free and vegan. Qrunch Foods makes a nice looking quinoa burger, which I haven't tried yet. Lastly, Organic Sunshine Burgers look awesome.

Recipe

Serves 2

 

2 gluten free bagels

2 veggie burgers

1 tomato

1/2 onion

2 slices vegan cheese ( Follow Your Heart or Daiya are great)

1/2 lb fresh, trimmed green beans

 

Directions

 

Boil large pot of water, once boiling, add  green beans. Turn heat to medium and cook for 10 minutes

 

Thinly slice onion and tomato, set aside

Use toaster oven or conventional oven to heat burgers (frozen burgers take about 10 minutes)

 

Toast bagel, and once toasted, assemble on plate with cheese, burger, onion, tomato on

 

Drain green beans, serve with dash of olive oil.

 

Voila, lazy baghel burgers!
